Abstract

The colloidal stability of low-concentration nanoemulsions based on technical rapeseed oil has been studied. The concentration of the oil phase and the type of emulsifier were considered as factors affecting the stability of dispersed systems. The concentration of rapeseed oil ranged from 0.1 to 5 vol.%. Span 60, PC‑501 and commercial emulsifier Aromashka were used to stabilize the emulsions. Colloidal stability was assessed using the Turbiscan method based on light transmission and backscattering profiles, as well as on changes in the TSI stability index over time. It is shown that an increase in rapeseed oil content leads to an increase in TSI, which indicates an increase in destabilization processes and a decrease in the stability of nanoemulsions. Among the considered emulsifiers, PC‑501 showed the most pronounced stabilizing effect, for which the smallest increase in the TSI index was observed over time
